Roasted Garlic & Rosemary Pumpkin Hummus

  • 1-2 clove Roasted Garlic
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Water
  • 1 can Chickpeas (drained and rinsed)
  • 2/3 cups Pumpkin Puree
  • 1 tablespoon Honey or Maple Syrup
  • 1/2 teaspoon Fresh Rosemary (finely minced)
  • Salt to taste



Step 1
To roast the garlic, simmer the peeled cloves in a small saucepan with olive oil for 15-20 minutes over low/medium heat. Allow to cool 10 minutes.

Step 2
Puree all ingredients ingredients except rosemary in a blender or food processor until smooth. Add more olive oil or water as needed. Pour into a serving bowl; stir in rosemary.

Step 3
Serve with warm naan, apple slices, crackers, carrots, pita bread.
