Arugula Summer Salad

Hold onto the flavors of summer with this simple Arugula Summer Salad. 


Yield: 4-6 servings

Prep Time: 15 minutes



3-4 cups fresh arugula

2 cups diced watermelon

2 cups diced cantaloupe

8 basil leaves, chopped



1/3 cup Mango White Vinegar

1/3 cup Blood Orange Olive Oil

Himalayan Salt and a little pepper to taste



1. Dice watermelon and cantaloupe. 

2. Chop basil leaves into fine pieces. 

3. Mix arugula, watermelon, cantaloupe into a large bowl. 

4. To get the best blend, pour the Mango White Vinegar into a bowl and pour in the Blood Orange Olive Oil in a thin stream while you whisk.

5. Sprinkle basil on top and serve.
