This vinegar is made from 95% Chardonnay and 5% Pinot Gris/Pinot Noir grapes. It has a desirable acidity level of 6%, which creates a tart, full body with “soft” edges and a fruity aroma. This Katz Farm Sparkling Wine Vinegar has hints of vanilla and subtle nuances of melon and cucumber in the finish. Use for a fabulous vinaigrette or in a reduction for seafood. Makes a great Champagne Beurre Blanc!
