1. Preheat oven to 450.
2. In a small bowl, whisk together the oil, salt and pepper.
3. Arrange the potato slices in rows on an oiled baking sheet. Brush the potatoes with the oil mixture, and roast them in the oven 10 minutes.
4. Flip so uncooked side faces up and return to oven for 10 more minutes, or until golden and crispy.
5. Transfer the potatoes to paper towels to drain, sprinkle with additional salt and pepper, if desired. Serve hot.
