Sally's Hatch Chile Pesto Guacamole
- 3 ripe Haas Avocados
- Juice of one lime
- 1/2 jar Gracious Gourmet Hatch Chile Pesto
- 1 bunch scallions, green part only, finely chopped
- 1 tsp sea salt
- Peel, seed and coarsely mash the avocados.
- Add the other ingredients, including Gracious Gourmet Hatch Chile Pesto, and mix well without breaking up the avocados too much.
- Refrigerate a couple of hours to meld flavors and serve with tortilla or pita chips.
