Herbed Lentil Salad

  • 1 cup Gradassi Lenticchia ((small lentils))
  • 3 teaspoons Balsamic Vinegar
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 Large Garlic Clove (minced)
  • Salt & Pepper to taste
  • 1 Small Zucchini (quartered lengthwise and thinly sliced)
  • 1/4 cup Roasted Red Pepper (chopped)
  • 2 tablespoons Fresh Herbs (chopped)



1. Combine lentils and 4 cups of water in a large saucepan. Bring to a boil and then reduce heat to low; simmer for about 20 minutes or until lentils are soft enough to eat, but still firm. Remove from heat and drain.

2. In a large bowl, whisk together balsamic vinegar, olive oil, garlic, salt, and pepper.

3. Add lentils, zucchini, red pepper, and herbs and stir until combined. For best flavor, refrigerate at least 3 hours before serving.
