Horiatiki (Greek Country Salad)

Ingredients:

  • 1 pound ripe tomatoes, quartered
  • 1/2 cucumber, peeled and sliced
  • 1 small green pepper, pith and seeds removed, thinly sliced
  • 1 medium onion, thinly sliced
  • 5 oz feta cheese, cubed
  • 12 kalamata olives
  • 1/2 teaspoon of Greek oregano
  • 4 Tablespoons Extra Virgin Olive Oil
  • Salt and Pepper, to taste

 

Directions:

  1. Place the first 4 ingredients in a bowl and dress with olive oil, salt, and pepper.
  2. Arrange feta cheese and olives on top and sprinkle with oregano.
