Reader Recipes: Amy's Mediterranean Salad

Cut tomatoes, peppers, and cucumbers into similar sized pieces.
In a small bowl, mix together the tomatoes, peppers, cucumbers, quinoa, chickpeas, lime juice, and red onion.
Season to taste.
Toss in your pita on your burner till it browns on one side, then flip to heat the other side.
Place the pita on a plate. Top with the salad.
Sprinkle the feta cheese the salad.
Drizzle Lemon "25 Star" White Balsamic Vinegar on top. Serve and Enjoy!
