Reader Recipes: Amy's Mediterranean Salad
- Cut tomatoes, peppers, and cucumbers into similar sized pieces.
- In a small bowl, mix together the tomatoes, peppers, cucumbers, quinoa, chickpeas, lime juice, and red onion.
- Season to taste.
- Toss in your pita on your burner till it browns on one side, then flip to heat the other side.
- Place the pita on a plate. Top with the salad.
- Sprinkle the feta cheese the salad.
- Drizzle Lemon "25 Star" White Balsamic Vinegar on top. Serve and Enjoy!
